food processing enzyme
Enzyme used to control food texture, flavour, appearance, or nutritional value. Amylases break down complex polysaccharides to simpler sugars; proteases tenderize meat proteins. A prominent target of food biotechnology is to develop novel food enzymes which can improve the quality of processed foods.
